SRT or VTT?
Take SRT for editors, YouTube and social platforms. Take VTT when the destination is a web page — HTML5 video reads VTT natively.
Are the timings against my edit or the original footage?
Against your edit. The captions line up with the cut you exported, so you can drop the file straight onto the finished video.
Can I get the captions burned into the picture instead?
You can, and you can also have them as a transparent ProRes layer that sits over your footage without being permanent.
